Fantastic Party!

The following two recipes were used at a party last night! Fantastic (party and dips!)!!!!! I make the Mexican Corn all the time and NEVER have leftovers! The Ranch Bean Dip is a new recipe and it also earned rave reviews - be warned though, it's not pretty, but it tastes great!

Mexican Corn


2 (15 oz) cans whole kernel corn, drained
1 (8 0z) package cream cheese
1/4 cup butter
10 jalapeno peppers, chopped (cheat and buy a can of already chopped peppers!)
1 tsp garlic salt

Put all in bean pot with lid and microwave 3 minutes, stir, then microwave again 1-3 minutes based on the wattage of your microwave!

Ranch Bean Dip


1 can refried beans
2 cups shredded cheese
1/2 of 1 oz pkg ranch dressing mix
1 cup sour cream

Put all ingredients in bean pot with lid and microwave for 3 minutes, stir, then microwave again for 1-3 minutes depending on the wattage of your microwave.

Minute Chocolate Mug Cake

1 Celebrating Home Coffee Mug
4 tablespoons flour (that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablesponns chocolate chips (optional - yeah right!)
Small splash of vanilla

Add dry ingredients to mug and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips and vanilla, mix again.
Put your mug in the microwave and cook for 3 minutes at full power. The cake will rise over the top of them mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (This can serve 2 if you want to share!)

And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!!!
